Go-To Guac!
One of my favorite types of food is Mexican food. Whenever I think about it I get a craving that I just can't kick until I whip up some tacos, enchiladas, or my favorite - fresh guacamole! I've spent a long time tweaking my guac recipe to get it to where it is today - and it was a big hit on Super Bowl Sunday. The key to creating excellent guacamole is in the ingredients - just right, perfectly ripened avocados, lots of fresh lime juice & a hit of freshly minced jalapeno. There are a few other ingredients in my recipe but nothing too complicated - you can whip up a bowl of this dip in 15 mins and people will devour it. Serve it traditional style with chips or on enchiladas, tacos or as a topping for eggs in the morning. Recipe below - enjoy!

Go-To Guac
(serves 4-6 people)
Ingredients
- 4 large, ripe avocados (not too ripe/soft!)
- 1/2 of a large red onion
- 2 limes (will use for juice & some zest)
- 1 large jalapeno
- 2 tsp garlic salt
- 1 tsp cracked pepper
- 1/2 tsp sea salt (add at the end & adjust according to taste)
Directions
Cut onion in half, then dice one half into very small pieces (so it's basically minced). If you have a chopper kitchen tool (pictured above) use that as it is quicker & minces nicely (I got mine from Pampered Chef). Set onion aside in a small bowl. Next, cut the jalapeno into thin strips (removing seeds, unless you want to keep them for extra heat). Mince jalapeno (manually or using chopper). Set aside.
Peel & cut all four avocados into about 1 inch cubes (keep one of the pits to add to bowl at the end before serving - this helps keep the guac fresh longer). Add avocado to a medium bowl & mash lightly with a fork for about one minute (leaving it somewhat chunky). Cut one of the limes in half and squeeze juice from each half into bowl over avocado.
Add onion, jalapeno, garlic salt & pepper and stir again. Using the second lime, shave enough zest to equal about 1/4 tsp and add to bowl. Cut lime in half & squeeze juice from each half over guac. Add the sea salt & stir - adjusting additional salt & pepper to your taste. Serve chilled!
